This recipe was given to me by my long time friend Shelly Firebaugh - she made these snacks for my bridal shower and they were a hit with everyone. Thanks Shelly!!
Preparation Time
20 minutes
Ingredients
8 oz pkg cream cheese
10 oz pkg frozen chopped spinach (thawed and drained)
toasted pine nuts
re-hydrated dried cranberries (just soak dried cranberries in a bowl of cold water until they plump up a bit)
chopped basil
flour or flavored tortillas
thinly sliced smoked turkey breast
As far as the pine nuts, cranberries, and basil are concerned...the
amounts are to your taste. It may take a little playing around with to find the best amounts.
Directions
in a mixing bowl, combine cream cheese, spinach, pine nuts, cranberries, and basil
spread mixture on tortillas and top with turkey
roll up tightly and slice (if I have the time, I chill the rolls for a few hours or overnight before slicing)
