Mom's Austrian Goulash

Ingredients
- 2 white onions, diced
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 tablespoons paprika
- 2 tablespoons apple cider vinegar
- 2 lbs veal stew, cubed (ok to use beef stew if veal is hard to find)
- salt & pepper
- 1/2 small can tomato paste
- 1 can chicken broth
- dash lemon juice
- 1/2 teaspoon sweet soy sauce
- 1/4 teaspoon cayenne pepper
- 1/4 cup heavy cream
Directions
- saute onions in olive oil and butter on medium heat until translucent.
- add paprika, then add apple cider vinegar right away - otherwise the paprika becomes bitter.
- stir in meat and let it take color.
- add a dash of salt & pepper.
- add tomato paste and stir.
- put lid on and cook for an hour and a half on low heat, checking every 15 minutes or so to stir and add some chicken broth to keep moist (shouldn't be too soupy but enough to keep it from burning).
- after the meat is done, add the lemon juice, soy sauce, cayenne pepper and heavy cream.
