Chocolate Cookie Raspberry Cheesecake

Ingredients
- 3 cups chocoate wafer cookie crumbs
- 1/4 cup sugar
- 3/4 cube melted butter
- 16 oz cream cheese (low fat is ok)
- 1 cup sugar
- 3 eggs
- 1 teaspoon vanilla
- 1 1/4 cup raspberry cake filling (available at cake decorating supply stores, or try this recipe.)
- 1 cup sour cream
- 1/4 cup sugar
- 1 teaspoon vanilla
- white chocolate curls (optional)
Directions
Crust:
- mix together 3 cups chocolate wafer cookie crumbs, 1/4 cup sugar and 3/4 cube melted butter
- pat into an 8 1/2-inch springform pan
Filling
- mix together 16 oz cream cheese, 1 cup sugar, 3 eggs (one at a time) and 1 teaspoon vanilla
- pour into chocolate cookie crust
- gently swirl 1/2 cup raspberry filling through cream cheese mixture
- bake at 325 degrees for 45-50 minutes, until sharp knife comes out almost clean
- remove from oven and cool 10 minutes
Topping
- mix together 1 cup sour cream, 1/4 cup sugar and 1 teaspoon vanilla
- spread mixture over cheese cake and return to oven for 5 minutes
- remove from oven and cool completely
- top with 3/4 cup raspberry filling and white chocolate curls
