Veggie Quesadillas

Preparation Time
Ingredients
- 2 cans black beans, drained and rinsed
- 1 pkg frozen chopped spinach, thawed and drained
- 3 roma tomatoes, diced
- 1/2 cup white onion. chopped
- salt and pepper to taste
- 1/2 teaspoon garlic powder
- 4 medium flour tortillas
- 1 cup shredded jack cheese
Directions
- mix together the black beans, spinach, roma tomatoes, onion, salt, pepper and garlic powder.
- place two tortillas on an ungreased cookie sheet, and split veggie mix evenly over the tortillas.
- sprinkle jack cheese on top of the veggie mix.
- top with the remaining tortillas, and bake at 425 for 10 minutes.
