Mashed Potatoes

Ingredients to Buy
- 4 large white pototoes, cut into small cubes
- 1/2 white onion, diced
- 3 tbsp heavy cream
Ingredients on Hand
- salt & pepper
- 4 tbsp butter
- 1 tsp nutmeg
Directions
- boil potatoes in water with a dash of salt, until potatoes are soft (~ 20 minutes)
- while potatoes are cooking, saute onion in 1 tbsp butter until brown and crispy
- after potatoes are done, drain well and beat with an electric mixer
- beat in 3 tbsp butter and heavy cream to moisten
- add nutmeg and dash of salt & pepper
- place potatoes in serving dish and spoon sauteed onions on top
