Green Beans in a Creamy Dill Sauce

This recipe is a family favorite, passed down from my great-grandmother.
Preparation Time
Ingredients
- 2 cups fresh green beans, washed and cut in 1 inch pieces
- 1/2 white onion, diced
- 1 tablespoon butter
- 1 tablespoon flour
- 1/2 cup half & half
- salt to taste
- pepper to taste
- lemon juice to taste
- cayenne pepper to taste
- sweet soy sauce to taste (for example, Conimex Ketjap Manis)
- fresh dill to taste (washed, dried and cut small - no stems)
Directions
- boil grean beans in salted water until tender (about 8 minutes).
- while the green beans are cooking, saute the onion in butter until onion is translucent (about 5 minutes); turn heat to low.
- add flour to onions - heat should be low so flour doesn't brown.
- add half & half; simmer for a few minutes.
- add salt, pepper, lemon juice, cayenne pepper, soy sauce and dill.
- when green beans are done, transfer to a bowl of ice water to keep them crisp.
- drain beans, dry, then add them to the dill sauce.
- simmer for a few minutes, then serve.
- add fresh dill on top to garnish.
